Water
Water is the most valued resource in any harvest ecosystem. In El Deseo there are two natural oases that provide fresh, natural water for the ecosystem, including coffee production and human consumption. One of our big efforts is to conserve these natural resources and the surrounding species and biodiverse, which is needed to preserve the environmental balance.
Birds play an important role in a coffee crop field. One of their roles is to act as a biological controller of the Coffee Borer Beetle, one of the biggest plagues for the coffee plant. On our farm, we have records of several bird species, from migratory birds to small and native species. This biodiversity is a good indicator of the environmental health of the ecosystem.

The Soil
Converting a traditional farm to organic production is a long process of decontamination and nutrition recovery. In El Deseo we have been touring this long path for the last five years.
